Pumpkin-cocoa cookies (approx. 20 pieces) Around 21 kcal per cookie (without extra sweetener) Craving something "chocolatey" with your coffee, without immediately using up your entire kcal budget? These cookies are soft and full of flavor from the cocoa and pumpkin, but almost ridiculously low in calories. Do not expect classic sugar cookies, but more of a fudgy, dark cocoa bite that lets you eat a few in a row without guilt.

Ingredients (in grams)

For approx. 20 cookies:
  • 225 g organic pumpkin puree
  • 70 g pure cocoa powder (unsweetened), preferably extra dark.
  • 30 g egg white
    • (≈ egg white from 1 medium egg)
  • 30 g nut butter (e.g. almond butter, smooth)
  • 2 g baking soda (½ tsp)
  • Optional: 10-20 g granulated sweetener of your choice
    • Note: this changes the number of kcal per cookie.
With this quantity you end up at roughly ± 21-22 kcal per cookie, depending on the exact products you use.

Method

  1. Preheat the oven to 175 °C (top/bottom heat).
  2. Line a baking tray with baking paper.
  3. Put the pumpkin puree, cocoa powder, egg white, nut butter, baking soda and optional sweetener together in one bowl.
  4. Mix everything well with a spatula or whisk until a thick, smooth batter forms.
    • It may be firm; that is how it should be.
  5. Use an (ice cream) scoop to spoon mounds of batter onto the baking tray.
    • For around 20 cookies: make small balls.
    • Want them a little flatter? Press them lightly with the back of a spoon.
  6. Bake the cookies for about 15 minutes in the center of the oven.
  7. Remove the baking tray from the oven and let the cookies cool on the baking tray for at least 1 hour.
    • At first they will seem soft; as they cool, they become firmer and easier to pick up.

Tips

  • Not sweet enough? Add a little more sweetener next time, or serve them with a bit of yogurt and some fruit.
  • Texture:
    • For more "fudge": make thicker mounds and bake them slightly shorter.
    • For drier cookies: make them flatter and bake them 1-2 minutes longer (but still let them cool properly).
That gives you a stack of chocolatey cookies that fit perfectly into a low-calorie plan, without feeling like you are only eating something "dry".
