I’ll prove to you that oatmeal is anything but boring with this dish! It tastes like warm apple pie and is healthy too! I’ve become a fan of this grain in the past year for good reason. You can do so much with it, including baking, cooking, soaking, and it’s also a great base ingredient for things like muffins, cakes, truffles, and cookies! This recipe is definitely a good choice to make on the weekend; it doesn’t take much effort but does need about half an hour in the oven. I use spelt milk or rice milk because they already have a sweet taste and therefore don’t need many additional ingredients to achieve the right flavor. Use ingredients you enjoy and keep trying new things. The soft texture and taste really surprised me! You can also replace the oatmeal with buckwheat or other grain flakes. For this recipe, I use a small round baking dish (for 1 person) so I can eat it right away. Truly a treat!
Ingredients
- 40 gr oatmeal
- 150 ml rice milk or spelt milk
- 2 tsp cinnamon
- handful of blueberries
- 15 gr vanilla protein powder (you can also use vanilla extract as desired)
- half a grated apple
- pinch of baking soda
Preparation Method
- Preheat the oven to 180-190 degrees Celsius.
- Combine the milk and oatmeal in a mixing bowl.
- Mix these ingredients and add the remaining ingredients to the mixture.
- Finally, add the vanilla protein powder, stirring continuously and gradually to avoid lumps.
- Then pour the mixture into the baking dish.
- Sprinkle some cinnamon on top as a finishing touch.
- Bake for about half an hour until cooked.
- Insert a skewer through it, and if it comes out clean, your dish is ready!
Variation Tip! Place slices of banana on top before it goes into the oven and try adding pieces of dark chocolate or coconut flakes!
