The Farmer’s Omelette is quick, tasty, and healthy! So, it’s ideal for those evenings when you lack cooking inspiration after a busy workday! You still want something nutritious to eat, but it should be easy and not time-consuming. The ingredients for the Farmer’s Omelette are often staples in your pantry, and you can easily vary based on what you have at home. You only need eggs and whatever vegetables you have (leftover). I usually opt for three types of vegetables. Officially, the Farmer’s Omelette includes vegetables and fried bacon. In this recipe, I omit the latter, but it’s nice to vary with it as well. Also, try variations with mushrooms, onions, spinach, tomatoes, but also with goat and feta cheese, fresh herbs like chives, and basil. Enjoy the Farmer’s Omelette on bread or toast with a fresh salad, and within 10 minutes, you have a worthy meal on the table! I often have the Farmer’s Omelette at home for dinner, but it also works great as a hearty breakfast or lunch, of course!
Ingredients
- 6-8 eggs for 2 people
- 1/2 cup (almond) milk
- 3 types of chopped vegetables such as spinach, mushrooms, and onion (or a bag of Italian stir-fry mix, also works fine!)
- optional: feta or goat cheese
- fresh chives
Preparation Method
- Heat some (coconut) oil in a large frying pan.
- Add the vegetables and fry for a few minutes, then reduce the heat.
- Whisk the eggs together with the (almond) milk in a bowl and pour it evenly over the vegetables.
- Once the egg is set, carefully flip the omelette and cook it on the other side.
- When the omelette is done, sprinkle the finely chopped chives on top.
- Serve the omelette directly from the pan, for example, on dark whole grain or spelt bread.
- Season with salt and pepper if desired.
Tip: Serve the Farmer’s Omelette with feta or goat cheese, along with a fresh tomato-arugula salad!
