Spelt lasagna with zucchini and mozzarella

Geschatte leestijd: 2 minuten I was actually planning to make a lasagna with just zucchinis and a ratatouille of vegetables and mozzarella but I came across whole grain spelt lasagna sheets and decided to prioritize this recipe. Not only did the combination seem delicious to me, I was looking for a lasagna that didn’t require much preparation time and didn’t have too many ingredients. Lasagnas often take a lot of time to make so I came up with this lasagna that is not only flavorful in its simplicity but also easy to prepare. This recipe is the result of my search. It’s enough for four people and two people could even eat it for two days! I use Greek yogurt instead of bechamel sauce because it’s a lot healthier and also fresh in taste. I love the Mediterranean cuisine and its simplicity, which is why this is an absolute winner among main courses!

Ingredients for Spelt Lasagna

  • 2 zucchinis
  • 4 Dutch vine tomatoes
  • 250 gr mozzarella
  • 125 gr grated mozzarella
  • 200 gr (whole grain/spelt) lasagna sheets
  • 1 clove of garlic (pressed)
  • fresh basil
  • fresh chives (finely chopped)
  • ground black pepper and sea salt
  • mixture of 300 gr Greek yogurt

Preparation of Spelt Lasagna

  1. Preheat the oven to 190 degrees Celsius.
  2. Mix the yogurt in a bowl with the garlic, chives, and some pepper and salt.
  3. Cut the zucchinis in half lengthwise and make strips with a cheese slicer.
  4. If possible, grill them briefly to release some of the zucchini’s moisture.
  5. Slice the mozzarella and tomatoes thinly (1/2 cm).
  6. Grease the baking dish with coconut oil.
  7. Start making layers. Begin with the zucchini, then the lasagna sheets, and then the yogurt.
  8. Sprinkle some sea salt and pepper on each layer of zucchini.
  9. Sprinkle some grated mozzarella on each layer of yogurt.
  10. Repeat the process starting with the zucchini and ending the layers with Greek yogurt.
  11. On top of these layers, place the slices of mozzarella and tomato (alternating lengthwise).
  12. Sprinkle them again with salt and pepper.
  13. Bake the lasagna for about 25 minutes until cooked through.
  14. Let the lasagna cool down well before serving. Then serve with fresh basil.
  15. Delicious with a fresh tomato salad on the side!
Tip! The lasagna can be filled with other ingredients as desired, such as minced meat or eggplant!
