Scrambled eggs with salmon and cottage cheese

Eggs are healthy! We should eat them more often because they provide you with the nutrients to start your day well. Not only are they one of our main sources of protein, eggs contain many vitamins & minerals and have a high content of omega-3 fatty acids. So, if you feel like having a healthy and hearty breakfast or lunch, eggs are a good choice! But this time, we're not going for a standard omelet, but for scrambled eggs with cottage cheese and salmon. Eggs and smoked salmon go so well together in terms of taste. Of course, it needs to remain nutritious, and that's why I brought these ingredients together. Cottage cheese (or Hüttenkäse) is low in fats and carbohydrates but rich in proteins. A protein-rich combination, so also ideal for after exercising!

Ingredients for scrambled eggs with salmon

  • 150 gr smoked salmon
  • 4 eggs
  • 2 slices of whole wheat bread (toasted)
  • 25 gr cottage cheese
  • handful of mixed lettuce
  • chives to taste
  • pepper and salt to taste
  • coconut oil for frying

  1. Break the eggs and beat them in a bowl.
  2. Toast the bread.
  3. Top the toast with cottage cheese, salmon, and mixed lettuce.
  4. Fry the eggs, keep stirring. It's best to fry them over low heat. After about 2 minutes, you can remove the pan from the heat.
  5. Add the scrambled eggs on top of the topped toast.
  6. Sprinkle with some chopped chives, pepper, and salt to taste and serve immediately.

Tip! Not a fan of smoked salmon? You can replace it with smoked chicken!
