Savory pumpkin muffins with goat cheese, chives and serrano ham

Geschatte leestijd: 2 minuten These savory muffins are incredibly tasty and are made with the typical autumn vegetable: pumpkin. Pumpkin is a healthy vegetable packed with vitamins (especially B11, E, and vitamin C) and antioxidants. These vitamins play an important role in various bodily processes and contribute to a strong immune system. Additionally, pumpkin contains many minerals including potassium, calcium, phosphorus, magnesium, iron, copper, and zinc. You can make both savory and sweet versions of pumpkin muffins. This time, I opted for a savory version. You can enjoy the muffins for breakfast, lunch, as a snack, or on-the-go. Moreover, if you want to prepare a delicious high tea with healthier muffins, these treats are an excellent choice! Making the muffins is not hard work. Perhaps the most labor-intensive part is removing the pumpkin’s skin. I prefer to mash the pumpkin a day in advance, which makes the process much easier! After that, it’s simply a matter of mixing the ingredients, filling the molds, and putting them in the oven. In the future, I definitely want to publish my own cookbook. This recipe would certainly be included!

Ingredients (for approximately 10 pumpkin muffins)

  • 160 grams goat cheese
  • 200 grams spelt or whole wheat flour
  • 200 grams pumpkin (cooked and mashed)
  • 50 ml milk
  • 1 onion
  • 10 grams chives
  • 10 cherry tomatoes
  • 3 eggs
  • pepper and sea salt
  • 1 tsp baking soda
  • slices of serrano ham
  • 3 tbsp olive or coconut oil

Preparation of Pumpkin Muffins

  1. Remove the pumpkin’s skin and cut the flesh into large pieces (similar to preparing boiled potatoes).
  2. Cook the pumpkin until it is soft and mash it into a puree.
  3. Preheat the oven to 200 degrees Celsius (temperature may vary per oven, choose your best baking setting).
  4. Transfer the puree to a mixing bowl and set it aside.
  5. Finely chop the chives, cut the cherry tomatoes into small pieces (juice can remain), and dice the goat cheese into 1 cm cubes.
  6. Add all of this to the pumpkin and season with pepper, sea salt, and optionally Provencal herbs.
  7. In the bowl of the food processor, combine the spelt or whole wheat flour, eggs, baking soda, oil, pepper, and sea salt, and mix until well combined.
  8. Add the batter to the pumpkin mixture and mix everything together until smooth.
  9. Then, fill the muffin cups in the baking pan generously over half with the batter.
  10. Bake them in the oven for about 30 minutes, until the muffins are golden brown.
  11. Now, twist a piece of serrano ham into a rose shape and place it in the center of each muffin. Optionally, decorate with some chives and/or fresh basil.
  12. You can serve them immediately, but they’re also delicious cold!
