These savory muffins are incredibly tasty and are made with the typical autumn vegetable: pumpkin. Pumpkin is a healthy vegetable packed with vitamins (especially B11, E, and vitamin C) and antioxidants. These vitamins play an important role in various bodily processes and contribute to a strong immune system. Additionally, pumpkin contains many minerals including potassium, calcium, phosphorus, magnesium, iron, copper, and zinc.
You can make both savory and sweet versions of pumpkin muffins. This time, I opted for a savory version. You can enjoy the muffins for breakfast, lunch, as a snack, or on-the-go. Moreover, if you want to prepare a delicious high tea with healthier muffins, these treats are an excellent choice!
Making the muffins is not hard work. Perhaps the most labor-intensive part is removing the pumpkin’s skin. I prefer to mash the pumpkin a day in advance, which makes the process much easier! After that, it’s simply a matter of mixing the ingredients, filling the molds, and putting them in the oven. In the future, I definitely want to publish my own cookbook. This recipe would certainly be included!
Ingredients (for approximately 10 pumpkin muffins)
- 160 grams goat cheese
- 200 grams spelt or whole wheat flour
- 200 grams pumpkin (cooked and mashed)
- 50 ml milk
- 1 onion
- 10 grams chives
- 10 cherry tomatoes
- 3 eggs
- pepper and sea salt
- 1 tsp baking soda
- slices of serrano ham
- 3 tbsp olive or coconut oil
Preparation of Pumpkin Muffins
- Remove the pumpkin’s skin and cut the flesh into large pieces (similar to preparing boiled potatoes).
- Cook the pumpkin until it is soft and mash it into a puree.
- Preheat the oven to 200 degrees Celsius (temperature may vary per oven, choose your best baking setting).
- Transfer the puree to a mixing bowl and set it aside.
- Finely chop the chives, cut the cherry tomatoes into small pieces (juice can remain), and dice the goat cheese into 1 cm cubes.
- Add all of this to the pumpkin and season with pepper, sea salt, and optionally Provencal herbs.
- In the bowl of the food processor, combine the spelt or whole wheat flour, eggs, baking soda, oil, pepper, and sea salt, and mix until well combined.
- Add the batter to the pumpkin mixture and mix everything together until smooth.
- Then, fill the muffin cups in the baking pan generously over half with the batter.
- Bake them in the oven for about 30 minutes, until the muffins are golden brown.
- Now, twist a piece of serrano ham into a rose shape and place it in the center of each muffin. Optionally, decorate with some chives and/or fresh basil.
- You can serve them immediately, but they’re also delicious cold!
