When you come home after a long day at work, you want to put something nutritious on the table, but preferably a dish that is easy to prepare and quick to make. This recipe is then a great choice! The combination with the shrimp, fresh mint, and soy sauce is really recommended because these flavors go very well together. In
no time, you have conjured up a special dish on the table!
Rice noodles are, after rice grains, the second most common rice product eaten in Asia. They require a shorter cooking time than regular pasta/noodles, which are usually made from wheat. Wheat pasta contains slightly more nutrients than rice, but rice noodles do not contain gluten, making them a good choice for people with a gluten allergy or celiac disease. So, if you want to make this dish even more nutritious, use whole wheat noodles instead of rice noodles. And if you’re not a fan of green beans, you can replace them with another vegetable like broccoli or green beans.
Ingredients for Rice Noodles with Shrimp
- 3 handfuls of peeled wok shrimp (uncooked)
- 150 grams wide rice noodles
- green beans
- 2 large tomatoes
- 2 cloves of garlic
- fresh mint leaves
- soy sauce
- olive oil
- a splash of fresh lemon juice
Preparation of Rice Noodles with Shrimp
- Put a pan of water on the stove and bring it to a boil.
- Then add the noodles to the boiling water and let them simmer for about 10 minutes over low heat. (depending on the type of noodles you use.)
- Cut the green beans into small pieces about 2 cm long. Cook them in a shallow layer of water (and butter if desired) until they are al dente. (Don’t cook them too long so they remain crispy).
- Press the garlic and dice the tomatoes.
- Now fry the wok shrimp with the garlic over medium heat and 5 minutes later you can add the tomato cubes.
- Fry them briefly until they are cooked. Season with pepper and sea salt.
- When the noodles are ready, rinse them with lukewarm water. Season them with some olive oil and sea salt and mix them with the green beans and a handful of roughly chopped mint leaves.
- Once the shrimp are ready, transfer them to a bowl. Mix them with a splash of olive oil, soy sauce, and a small splash of lemon juice.
- The noodles can now be divided onto plates. Then the shrimp mixture can be placed on top.
- Sprinkle some roughly chopped mint leaves on top and your dish is ready!
