A refreshing salad with a flavor combination that you don’t often come across but is super tasty and healthy! In the summer, we often opt for light meals and eat more salads. Sometimes we lack inspiration to vary and often choose standard ingredients like cucumber, tomato, and (often unhealthy) dressing. This salad is definitely not standard but quick and healthy! I gladly took inspiration and came up with this combination myself.
Strawberries and basil go very well together. I often use this combination in my smoothies too. Quinoa is light and doesn’t weigh heavy on the stomach. You can vary it so much, and everything comes into its own in this salad! Mozzarella adds a nice savory texture to it, and the balsamic provides a deeper flavor. You can also replace the strawberries with raspberries or grapefruit.
Ingredients Quinoa Salad (2 servings)
- 80/100 g Quinoa
- 100 g mixed salad
- 10-12 strawberries
- 220 g mozzarella (1 large ball)
- fresh basil leaves
- 1 tbsp balsamic vinegar per person
- fresh lemon juice
- handful of cashew nuts
- 1 spring onion or fresh chives
Preparation of Quinoa Salad
- Rinse the Quinoa and cook it according to the instructions.
- Meanwhile, cut the strawberries in half lengthwise or into quarters.
- Also, finely chop the spring onion or chives into equal pieces.
- Cut the mozzarella into cubes of about 1.5 cm.
- Put the mozzarella in a small bowl and mix with a tablespoon of olive oil, pepper, and salt to taste.
- Once the Quinoa is ready, let it cool down well. Season with some lemon juice and salt.
- Mix the salad with the quinoa and divide it into two salad bowls.
- Add the mozzarella cubes, nuts (optionally finely chopped), strawberries, and spring onions. Distribute evenly.
- Drizzle some balsamic vinegar over it, and your salad is ready!
Tip! You can also easily take this salad to work! Cook the quinoa the night before, and your salad will be ready in the morning! Bring the balsamic separately.
