Preparation Method
Put the whites of 2 fresh eggs in a bowl. Peel the banana and put it in a food processor, grind it until you have a banana puree. Add the egg white, milk, cinnamon, and banana puree together and make sure you mix the ingredients well. Heat a bit of coconut oil in the frying pan and pour in the batter. Done!

400 grams of buckwheat flour
3 fresh free-range eggs
900 ml (oat) milk
pinch of salt

1 avocado
1 finely chopped spring onion
lettuce leaves
Bean sprouts
Pecans (small handful)
Preparation Method
Combine the ingredients of the batter in a bowl and mix well until you get a smooth mixture. Heat a pan and add a splash of coconut oil, fry the pancakes over medium heat. When the pancake is brown on both sides, let it cool for 1 minute. Then top the pancake with avocado, lettuce, bean sprouts, and some pecans. Roll up the pancake and you have a perfect lunch or dinner recipe!
