Almost every Sunday, I find myself in the kitchen to bake something in the oven. I frequently blog about my creations! I try out all sorts of things, and usually, they turn out well! The same goes for these oatmeal muffins! Not only do I use natural ingredients, but they are also healthy, which is not usually the case with regular muffins. You can eat them for breakfast or as a snack. Below is one of the variations I’ve made. The muffins are easy to make, and you can vary the ingredients endlessly. Even if only for the wonderful cozy smell in the house. But at home, they find these muffins very tasty, so definitely worth repeating!
Ingredients for oatmeal muffins
- 6 to 10 cupcake liners
- cupcake tin (optional but easier)
- 100 grams of oatmeal
- 1 banana
- 1 handful of walnuts
- 50 grams of dried fruit
- 2 tsp baking powder
- 2 eggs
- 1 handful of small pieces of chocolate (min. 75% cocoa)
- 2 tablespoons of grated coconut (optional)
- 2 teaspoons of raw cocoa powder (optional)
Preparation of oatmeal muffins
- 10 minutes to prepare and 25 minutes in the oven
- Prepare the food processor.
- Add the oatmeal and let the machine run until it’s almost flour-like.
- Add the peeled banana, eggs, raw cocoa (optional), coconut (optional), chocolate, dried fruit, and walnuts.
- Let the food processor run again and mix until you have a smooth mixture.
- Fill the cupcake liners with a tablespoon until just over halfway full.
- Bake the muffins for about 25 minutes in a preheated oven at 200 degrees Celsius.
- Insert a skewer into the muffin; if it comes out clean, they’re ready.
- Let them cool down for a bit, and the oatmeal muffins are ready.
Tip! For example, vary with blueberries, cranberries, cinnamon, and apple pieces. You can also omit some ingredients.
