Homemade banana bread

Geschatte leestijd: 2 minuten On Sundays, I frequently find myself in the kitchen experimenting with new recipes. I enjoy drawing inspiration from various cookbooks, but I always put my own spin on things. I replace some ingredients or add something to them. This way, you create your own version, which makes it unique. The same goes for this banana bread. It’s easy to make yourself and a nice change from cake or bread. I use only natural ingredients without added sugars for this recipe. I use almond flour, but you can also use spelt or quinoa flour. You can vary the ingredients, such as with nuts, chocolate, figs, blueberries, and coconut. Banana bread has more of a cake-like texture. Therefore, you can eat it for breakfast or as a snack, and even as dessert. I almost always use coconut oil for baking, but that’s of course up to you. One more thing: despite the healthy ingredients, it does contain a fair amount of calories, so you can’t keep eating it endlessly. Always enjoy in moderation.

Ingredients for banana bread

  • cake tin (23 cm)
  • 3 ripe bananas
  • 50 seedless dates
  • 3 eggs (room temperature)
  • 150 gr almond flour
  • 1.5 tsp baking soda (health food store)
  • pinch of salt
  • 1 tsp coconut oil
  • optional: 2 tsp raw cocoa powder
  • optional: dark chocolate pieces (min 75% cocoa), nuts, figs, and coconut

Preparation of banana bread

  1. Preheat your oven to 180 degrees.
  2. Beat the eggs and salt together in a mixing bowl.
  3. Then, separately in the food processor, puree the bananas together with the dates.
  4. Add the eggs, almond flour, and baking soda to the banana mixture. Mix well until a smooth batter forms.
  5. Now you can optionally add some extra ingredients such as nuts, chocolate, blueberries, or other red fruits (not too much).
  6. Ensure the cake tin is well greased with coconut oil, then pour the mixture into the tin.
  7. Bake the bread for about 45 minutes. Then let it cool.
  8. Insert a skewer into the bread. If it comes out clean and the top of the bread is firm, then it’s done!
Tip! Freeze your banana bread in sliced portions so you can enjoy a snack at any time.
