Gnocchi di fries with chicken

Geschatte leestijd: 2 minuten Gnocchi (pronounced as Njokkie) is one of those things I came across and was very curious about. Gnocchi may not sound familiar to many Dutch people. Gnocchi di patate, as the original name goes, is a typical Italian dish made from potato and wheat flour. The potatoes are cooked and mashed, then kneaded with flour and a little salt, and then cooked in small oval balls. They are often served with a sauce of tomatoes or soft cheese. You can buy them, but you can also easily make them yourself, for example, with sweet potatoes. But for convenience, you can find the packaged version in any supermarket. This dish offers a lot of healthy nutrients due to the variety of proteins, carbohydrates, fresh vegetables, and herbs. Gnocchi itself doesn’t have much flavor, so be sure to season them well with some sea salt. You can add salt while cooking or season the gnocchi after draining. This also applies to the chicken breast. Season it well with herbs of your choice while cooking. By adding capers and balsamic vinegar, this dish really comes into its own! A hearty and easy dish full of Italian flavors that you should definitely try!

Ingredients for gnocchi di patate

  • 1 packet of Gnocchi
  • 2 red onions
  • handful of fresh basil
  • cloves of garlic (or two for enthusiasts)
  • 2 chicken breasts (preferably organic)
  • 400 grams of diced tomatoes
  • 3 Roma tomatoes
  • 1 red bell pepper
  • 300 grams of spinach
  • 25 ml balsamic vinegar
  • 2 tablespoons of capers
  • optional; 125 grams of grated Parmesan cheese

Preparation of gnocchi di patate

  1. Cook the Gnocchi as instructed on the packaging with some salt.
  2. Cut the chicken breasts into pieces.
  3. Cut the onions, tomatoes, and bell pepper into cubes.
  4. Sauté the onions and garlic first over high heat and then add the chicken over medium heat. Season well to taste.
  5. Then add the bell pepper, tomatoes, and diced tomatoes.
  6. Finally, briefly sauté the spinach until it wilts.
  7. When the Gnocchi is ready (when they float to the surface), drain them.
  8. Then add the gnocchi to the mixture.
  9. Let it simmer gently for about 10 minutes.
  10. Now add the basil, balsamic vinegar, and capers to the mixture.
  11. For the finishing touch, sprinkle some Parmesan cheese over it, and your dish is ready!
TIP! For extra flavor, stir a tablespoon of pesto through the Gnocchi!
