Freshly filled Spring Rolls

Geschatte leestijd: 2 minuten I’m a fan of Asian food and these spring rolls have been on my recipe list for a long time, and they’re delicious and healthy! These spring rolls are not fried or baked, so they’re definitely a healthier alternative! Rice paper spring rolls are widely used in Asian cuisine, especially in Vietnamese cuisine. They are made from rice starch and are therefore gluten-free. You can fill them with fish, meat, or chicken combined with various vegetables. I chose a variation with chicken and raw salmon. So, you can fill them with whatever you like. It’s a light dish and can also be served as an appetizer. Making these spring rolls is very easy. Most of the work lies in preparing the ingredients, that’s it! You should definitely try these spring rolls! Especially delicious with a dipping sauce; soy sauce or Hoisin sauce.

Ingredients

  • rice paper (round, 22 cm, available at Asian grocery stores or online)
  • romaine lettuce or a small head of lettuce
  • optional; chicken (smoked, baked), salmon (raw, smoked, baked)
  • some Chinese cabbage, bean sprouts, and carrot
  • mint leaves
  • ripe avocado
  • optional; rice vermicelli (available at supermarkets or Asian grocery stores)
  • for the dip choose from; soy sauce, chili sauce, or Hoisin sauce (available at supermarkets or Asian grocery stores)
  • optional for decoration: sesame seeds

Preparation method

  1. Prepare all ingredients for use.
  2. Cut all ingredients into thin strips.
  3. Prepare the rice vermicelli according to the instructions.
  4. Cook the chicken until done and season it with garlic, pepper, and sea salt. Also, cut it into thin strips.
  5. Quickly soak the rice paper (per sheet) in lukewarm water (on a plate) until it becomes softer.
  6. Place the rice paper in front of you on a dry work surface or cutting board and fill it with the ingredients about 4 cm away from you, at the bottom of the rice paper. Leave about 2 cm free on both sides.
  7. Start with the lettuce and then arrange the other ingredients together and on top of the lettuce.
  8. Fold the sides inward and roll the spring roll closed (Roll away from you.)
  9. Roll the spring roll gently but firmly into a compact whole.
  10. Cut the spring roll in half and serve on a nice plate with dipping sauce.
