A healthy soup with broccoli and smoked chicken! This is the summer version of the wintry pea soup. However, this soup is less heavy and deliciously light. Broccoli is known for its super healthy properties because this vegetable contains many healthy nutrients. And what’s better than a homemade soup with fresh ingredients! Many people think that a soup needs to simmer for hours to develop its flavor, but that is not the case with this soup. If you follow the instructions, this healthy soup is made in no time! Enjoy the soup with freshly baked bread or serve it as an appetizer.
Ingredients Fresh broccoli soup
- about 1 liter of vegetable broth
- 600 grams (1 large stalk) of broccoli
- 2 onions
- 1 large potato
- 1 to 2 cloves of garlic (according to preference)
- 1 smoked chicken breast
- pepper and sea salt
- fresh basil
Preparation Fresh broccoli soup
- Finely chop (or press) the onion and garlic and fry them in a soup pan.
- Heat the vegetable broth.
- Peel the potato and cut it into cubes. Cook them separately until they are al dente.
- Cut the broccoli into small pieces and add them to the broth. Bring to a boil.
- Cook the potatoes until tender and the broccoli not too long, otherwise you will cook out all the vitamins.
- Drain the potatoes and add them to the broth, then let it simmer gently for a few minutes.
- Season with a good amount of pepper and salt (according to taste).
- Blend the soup bit by bit in a blender and also add 2 handfuls of fresh basil while blending.
- Pour the soup into bowls.
- Cut the smoked chicken breast into cubes and add them on top in the middle of the soup bowl, and your fresh broccoli soup is ready!
Tip! When serving, stir a teaspoon of Greek yogurt in a circle through the soup! It looks nice and makes the soup creamier!
