When I walk through the supermarket, I’m always looking for new products to try out. That’s how I stumbled upon the 100% organic meals (seeds and ancient grains) from Zonnatura. I was very curious and bought all the variants right away, and I can say that I wasn’t disappointed. I’ve already made several variations with them. Today, I’m sharing a recipe with cod and fresh vegetables.
Ingredients for cod with quinoa
In no time, you’ll have a nutritious and responsible meal on the table! You can turn it into a delicious vegetarian dish by combining the meals with feta cheese or mozzarella, but I especially like it with a piece of fish or grilled chicken. Use the meals as a base for lunch, dinner, or a salad. A great alternative to potatoes, rice, and bread.
You can get them in 4 different meals. For this recipe, I’m using the meal with quinoa, olive, and tomato.
- 150-200 grams fresh cod (per person)
- 250 grams Zonnatura Meal: Quinoa with olive and tomato
- 100 grams mixed lettuce
- 2 tsp (spicy) mustard
- mixed sliced vegetables: spring onions and bell pepper
- optional: soy sauce to taste
- pepper, sea salt, and fresh herbs; a clove of garlic and optionally cress or chives
Preparation method for cod with quinoa and vegetables
- Rub the cod with a little olive oil, 1 tsp mustard, and optionally some fish seasoning.
- Fry it in a pan and season with freshly squeezed garlic, pepper, and sea salt.
- Also fry the sliced vegetables and season them to taste.
- In a salad bowl or dish, place the mixed lettuce (can optionally be seasoned with some olive oil and lemon juice).
- Then, heat up the Zonnatura quinoa according to the instructions. Optionally, a little soy sauce can be added.
- Add this on top of the bed of lettuce with the fried vegetables.
- Then, place the fried cod on top as well.
- Finish it off with some fresh herbs and your dish is ready! Enjoy!
