With the warm weather approaching, we sometimes don’t want to eat anything too heavy, and a salad can be an easy and healthy alternative. Especially with warm vegetables and meat, you have a worthy dish for dinner. This Beef Teriyaki salad is a completely original creation, and convenience is key in this recipe! The steak can be cooked to your preference, but in this salad, I recommend cooking it medium-rare or grilling it. This way, the steak remains tender and juicy. If you have more time, you can also marinate the steak in advance with the teriyaki dressing to add more flavor. You can do this an hour before. For convenience on weekends or after a busy day at work, the Beef Teriyaki salad is a top dish!
Ingredients Beef Teriyaki Salad
- 150 grams steak per person
- 125 grams mixed lettuce
- 3 tomatoes
- bean sprouts (as desired)
- champignons (as desired)
- half cucumber
- 1 onion
- 1 to 2 cloves of garlic as desired
- 1 red bell pepper
- teriyaki sauce (make your own or use ready-made. See below for the recipe if you want to make it yourself.
- optional; fresh chives or cilantro
- pepper and sea salt
Ingredients Teriyaki Sauce
- Juice of 2 limes
- 1 tsp brown sugar
- 2 tsp sesame oil
- 1 tbsp salty soy sauce
- 1 tbsp fish sauce
- 2 tsp freshly chopped ginger
- 1 clove of garlic
Preparation Method Beef Teriyaki Salad
- Wash the vegetables and first cut the bell pepper, onion, and mushrooms into pieces (not too small).
- To make the homemade teriyaki dressing, mix the ingredients together.
- Then cut the cucumber and tomatoes into cubes and mix them with the mixed lettuce.
- Fill the salad halfway into 2 salad bowls.
- Lightly brush the steak with 1 tbsp (coconut) oil and fry or grill the steak for 3-4 minutes per side, leaving the inside pink.
- Season the steak with some teriyaki dressing and some pepper and salt, then let the meat rest for 5 minutes and slice it into strips.
- Now sauté the vegetables for a few minutes. Start with the mushrooms, onion, and garlic, and add the bean sprouts.
- Add some teriyaki sauce to taste and season with pepper and salt. Cook for another 2 minutes over high heat.
- Now, first add the sautéed vegetables to the salad, then place the steak on top of the vegetables.
- Sprinkle some fresh chives on top, and your Beef Teriyaki salad is ready!
Tip! Add freshly chopped cilantro to the sautéed vegetables to enhance the Asian flavor even more!
